Here’s the thing.. I’m a crust girl through and through. Pizza crust, pie crust, quiche crust, pb&j sandwich crust..I want it all. Crust absolutely makes or breaks what’s on top. So as I’ve been hearing all this hype about cauliflower pizza crust as a gluten-free, low-cal alternative, I have been super curious, but super skeptical. I like healthy alternatives to my favorite foods, but I wasn’t keen on messing with crust. It’s just too important.
However, my attempt at clean, healthy eating before our upcoming Labor Day beach trip seemed like a perfect opportunity to finally try it. My alternative was a boring spinach salad, so what was there to lose?
Also, How Sweet It Is just did a post about cauliflower crust can be completely amazing. And that from a girl would live without vegetables if she could. I’m not quite that bad, but thanks for the final push to try it!
As it turns out, absolutely nothing! This cauliflower crust was incredible. It packed a ton of flavor, much more than a regular flour crust, and weighed in at less than half the calories. I will definitely admit that the texture is different, and I wouldn’t replace regular crust with cauliflower crust all the time, it was surprisingly delicious.
To be fair, I decided to top my crust with gouda & honey mustard chicken, so this aided that flavor punch. (I’ll admit that I was terribly fearful of the cauliflower crust, so I loaded the flavor on top to be sure that it was edible)
Even with all the filthy delicious toppings, this pizza comes in under 400 calories per serving. Between the cauliflower alternative and a light hand with the sauces and cheeses, I’m one step closer feeling beach ready!
You will need:
1 small cauliflower
1/4 cup shredded cheddar cheese
1/4 cup shredded mozzarella cheese
1/3 cup egg whites (equivalent to one egg)
salt & pepper
1 chicken breast, diced
3 tbsp light honey dijon mustard dressing
1/2 vine tomato, diced
1/2 small yellow onion, sliced
2 tbsp light mayo
1 tbsp whole grain mustard
2 tsp balsamic vinegar
1/2 cup smoked gouda, cubed
1/4 cup mozzarella
Preheat oven to 450°
Shred or grate the cauliflower in a food processor until it is in very small, rice-like pieces.
Press out all moisture with paper towels.
Combine cauliflower in a bowl with cheeses, egg whites, and spices.
Spray non-stick baking sheet with cooking spray.
Press out cauliflower mixture flat on sheet. Get it as thin & even as possible.
Bake in oven for 20-25 minutes or until golden brown.
Toss diced chicken breast in honey dijon dressing & saute until cooked through.
In a small bowl, mix together mayo, mustard, vinegar, and a few good shakes of black pepper
Pull crust out of the oven & allow to cool for just a minute
Spread mayo-mustard mixture evenly onto the crust.
Sprinkle chicken, tomatoes, onions, and smoked gouda across crust.
Top with additional mozzarella & a shake of oregano for good luck.
Pop back into the oven for 15 minutes or until cheese is melty and bubbly.
Enjoy completely guilt-free! Three days till the beach!
